Hot Chocolate Fudge Cake

PINK VELVET CUPCAKES
You will need:
3 cups all-purpose flour
2 tsp unsweetened cocoa powder
3/4 tsp salt
3 large eggs, room temperature
3/4 cup butter, room temperature
2 1/4 cups granulated sugar
1 1/2 tsp vanilla extract
red food coloring
1 1/2 cups buttermilk
1 1/2 tsp baking soda
1 1/2 tsp vinegar
Buttercream frosting (recipe below)
Directions:
1. Preheat oven to 350 degrees. Line cupcake pans with paper liners.
2. Whisk together flour, cocoa powder, and salt; set aside.
3. In a separate bowl, beat butter for 30 seconds until fluffy. Add sugar and vanilla and beat until combined. Add eggs one at a time and beat on medium speed. Beat in food coloring on low; add your desired amount, less for a more pink look and more for a redder look.
4. Alternately add flour mixture and buttermilk to egg mixture, beat until combined.
5. Stir together baking soda and vinegar. Add to batter; beat until combined.
6. Fill cupcake liners 2/3 full. Bake 15-18 minutes, or until toothpick inserted near center comes out clean.
7. Let cool, then frost with butter-cream frosting.
BUTTERCREAM FROSTING
You will need:
1 1/2 cups whole milk
1/3 cup flour
dash of salt
1 1/2 cups softened butter
1 1/2 cups granulated sugar
2 tsp vanilla extract
red food coloring
Directions:
1. In a medium saucepan, mix together milk, flour, and salt. Cook on medium heat while stirring occasionally, until thickened and bubbly. Reduce cook and cook for 2 more minutes, while stirring consistently. Transfer mixture to a small bowl, cover, and refrigerate until completely cooled (about an hour).
2. In a large bowl, beat butter, sugar, and vanilla for 5 minutes until light and fluffy and sugar is almost dissolved. Add cooled milk mixture gradually and beat until combined.
3. Add red food coloring until desired color. Continue to beat for 2-3 minutes, or until mixture extra creamy.
4. Top with sprinkles, nuts, candy, etc.
pineapple strawberry limeade
Ingredients:
- 1 12-ounce can frozen pineapple juice concentrate, thawed
- 1 6-ounce can frozen limeade concentrate, thawed
- 4 cups cold water * 1 liter club soda, chilled
- Ice cubes
- Fresh strawberries (optional)
- Short (6-inch) wooden skewers
- Assorted fruits such as halved orange slices, halved lime slices, orange sections, raspberries, strawberries, sliced kiwifruit, and mint sprigs
Directions:
In a large pitcher combine pineapple juice concentrate, limeade, and water. Chill for at least 30 minutes. To serve, transfer fruit juice mixture to pitchers; add club soda, ice cubes, and fresh strawberries.
Serve with Fruit Swizzle Sticks, if desired.
Makes 14 (6-ounce) servings.Fruit Swizzle Sticks: On short (6-inch) wooden skewers, thread assorted fruits and mint sprigs. Make-Ahead Tip: Up to 24 hours ahead, prepare the juice mixture and chill well. Proceed as directed.
